Side- Speedy Spanish Rice

You can use brown rice in this recipe if desired- just keep in mind to adjust the cooking time. Brown rice tends to take longer. Add more water if needed.

Side- Speedy Spanish Rice

1/2 lb. hamburger
1 medium onion, diced
1 1/2 tsp salt
1/4 tsp pepper
2 cups tomato juice
2 cups water
1 cup rice
1 cup shredded cheese

Directions:
Brown hamburger and onion in a skillet. Add the remaining ingredients except the cheese. Cover and simmer for 20 minutes or until rice is soft. Add more water if needed. Stir in cheese just before serving.
