Sandwiches- Barbeque Chicken Sandwiches
A quick but tasty lunch recipe.
1 cup shredded cooked chicken (about 5 ounces)
½ cup shredded carrots (about 1 medium carrot)
3 Tablespoons barbecue sauce
1 Tablespoon olive-oil mayo or plain greek yogurt
2 whole-wheat burger buns or sandwich thins
In a medium bowl, stir together the chicken, carrots, and barbecue sauce. Mix until the chicken and carrots are well coated with the sauce.
Spread half of the mayo or greek yogurt on the top halves of each bun.
Top the bottom half of each bun with half of the chicken mixture and 2 lettuce leaves.
Serve immediately or warm briefly in the microwave before serving, 15-30 seconds.
