Dessert- Crunchy Oat Nut Cookies
A healthy cookie with peanut butter, oats, nuts, and dried fruit.
½ cup peanut butter
¼ cup maple syrup
¼ teaspoon baking soda
¼ teaspoon salt
¾ cup rolled oats
⅓ cup chopped nuts (any)
⅓ cup dried fruit (raisins, dried cranberries, dried cherries)
1 Tablespoon chia seeds (optional)
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a medium bowl, stir together the peanut butter and maple syrup. Add the baking soda and salt. Stir to combine. Add the oats, nuts, dried fruit, and chia seeds (if using). Stir to combine.
Using a tablespoon, spoon a heaping spoonful onto the prepared baking sheet.
Bake for 13 minutes. Let cool slightly, about 5-10 minutes, before serving.
